Futura, Bauli’s Mother Yeast enter the prestigious “yeast library”

The centenary sourdough of the Bauli Group has been officially included in the collection of the Sourdough Institute in Brussels, the only “yeast museum” dedicated to the preservation of sourdoughs from all over the world

The Bauli Group consolidates its commitment to the protection of tradition and innovation by announcing the official entry of Futura, the sourdough starter which for over a century has represented the heart of its production, in the prestigious Sourdough Library of the Sourdough Institute in Puratos, in Sankt Vith, Belgium.

The 4th December Fabio Di Giammarco, CEO of the Bauli Group, joined for the occasion by Alberto Molinari, General Manager of Puratos Italy, has formalized the storage of Futura at the facility. To welcome them too Pierre Tossut, CEO of the Puratos Group.
One of a kind, this “yeast library”, founded in 2013 on the initiative of Puratos, an international company active in the baking, pastry and chocolate sectors,preserves and enhances sourdoughs from all over the world, representing a pillar for the protection of biodiversity and the advancement of research in the natural baking sector.
Futura, refreshed daily according to a method handed down since the company was founded, is the basis of every Bauli product. This sourdough gives fragrance, softness and that distinctive quality that has made the Group’s products symbols of Made in Italy. Registration with the Sourdough Institute represents a tangible recognition of this historic heritage and cultural, and a further step to ensure its future conservation.

The partnership with the Sourdough Institute allows the Bauli Group to actively contribute to a project that has three ambitious objectives:
• preserve biodiversity through the preservation of sourdough samples, offering insights into their histories and fermentation and bread-making processes;
• contribute to research on mother yeast through collaboration with universities and specialized institutes, with a view to continuous improvement of fermentation processes and discovery of the infinite potential of yeast;
• Promoting sourdough culture and raise community awareness of the importance and benefits of natural leavening through masterclasses, practical advice and recipes, promoting theawareness and knowledge about the unique qualities of this process.

Futura thus becomes the 155th yeast officially registered in the library, accompanied by the relevant information and documentation.
