The Bauli Group actively manages innovation focusing on 3 main areas:
product innovation, processes and digital innovation, future talent scouting and education.

Bauli Patisserie Academy is an innovative initiative by the Bauli Group, created in collaboration with CAST Alimenti, the school of excellence for culinary arts.

The project aims to offer specialized training to young talents, enabling them to join the Bauli Pastry Team, a group of expert pastry chefs working in the Research and Development department. Inaugurated in April 2024, the Academy represents a cutting-edge program that provides comprehensive and free training, fully funded by the Bauli Group.

The program has attracted young participants from across Italy, as well as internal employees, with the goal of developing highly qualified professionals in pastry techniques. During the course, students have the opportunity to learn not only the fundamentals of pastry making but also the latest innovations in technology and production, gaining skills that prepare them to meet the challenges of the market.

The project underscores Bauli’s commitment to nurturing the next generation and its ongoing search for talent, with a particular focus on craftsmanship excellence and innovation in the pastry sector. In this way, the Academy not only trains professionals but also contributes to the continuous improvement of Bauli’s product quality.

SENSORY
LAB

The sensory lab at Bauli is the perfect blend of science and passion, allowing us to drive innovation and improve product quality. By analyzing consumers’ sensory perceptions (sight, smell, hearing, and touch), we can refine products, perfect recipes, develop new solutions, and monitor their effectiveness over time.

Thanks to scientific methods such as the use of expert panels, laboratory tests, and advanced technological tools, we can gather very precise and targeted information about the products. This approach, which combines technical rigor with creativity, stimulates innovation, enabling us to respond to market challenges with increasingly refined and competitive solutions. In this way, sensory analysis is not just a control process but a driving force for evolution and success.

DIGITAL
LAB

Digital Lab, our technological innovation laboratory, known as #BauliNext, is a place where ideas meet digital technologies to become concrete experiences supporting the Bauli Group. Here, we explore new solutions and innovative tools, sparking new inspirations for the future.
This space is not reserved for IT alone, it is open to everyone: a bridge between technology and business to redefine the way we think, work, and live every day.

INNOVATION
CENTER

The Bauli Group’s Innovation Center is located in San Martino Buon Albergo (VR) facility and covers an area of approximately 500 square meters.

The center supports Bauli Group’s innovation strategy through continuous investments to expand and modernize the premises and equipment, in order to anticipate future technologies, meet innovation needs and launch new products on the market.

Among the equipment available are mixers of various sizes, different types of ovens, vacuum cooling systems, and machinery for chocolate and biscuit production. The analytical laboratory allows for the evaluation of chemicalphysical and organoleptic parameters. Furthermore, the Innovation Center is also exploring new sectors, such as ice cream production and extrusion, with the acquisition of advanced technologies.
